Ensalada Malagueña




The Malagueña salad is a staple of popular Málaga cuisine. It's easy to prepare, cost-effective, nutritious, and can be whipped up at any moment. Once it's made, it can be stored in the fridge, well covered. This dish hails from humble beginnings, and its defining feature is that it utilises produce from the "land" (potatoes, spring onions, oranges, olives, olive oil) and salted cod.


INGREDIENTS:

  • 3 medium potatoes

  • 3 oranges from Guadalhorce

  • 100g salted cod, cut into strips

  • 3 spring onions or one onion

  • 2 hard-boiled eggs

  • Coarse salt (optional)

  • Split olives (Aloreña variety)

  • 100ml Extra virgin olive oil

  • 1 deciliter of milk and water (for blanching the cod)

This restaurant in Málaga is one of the most well-known and recommended, both by locals and travellers, if you want to enjoy some traditional dishes from the Málaga cuisine or a rice dish that's unbeatable, and, for many, the best in town.



Although they have a wide variety on the menu, given the generous portion sizes, we suggest opting for a starter and any of their rice dishes, especially the lobster one, which, we assure you, will leave you speechless.
