Ensalada Malagueña
The Malagueña salad is a staple of popular Málaga cuisine. It's easy to prepare, cost-effective, nutritious, and can be whipped up at any moment. Once it's made, it can be stored in the fridge, well covered. This dish hails from humble beginnings, and its defining feature is that it utilises produce from the "land" (potatoes, spring onions, oranges, olives, olive oil) and salted cod.
INGREDIENTS:
3 medium potatoes
3 oranges from Guadalhorce
100g salted cod, cut into strips
3 spring onions or one onion
2 hard-boiled eggs
Coarse salt (optional)
Split olives (Aloreña variety)
100ml Extra virgin olive oil
1 deciliter of milk and water (for blanching the cod)
